Eataly

Today I had lunch in Eataly, yes you read that right:  Eataly.  Although, I’ve eaten in Italy, too. Eataly is America’s first 50,000 square feet behemoth of an Italian food market that just opened in New York City.  In this fancy retail store of all things Italy (including a cooking school, restaurants, wine store, coffee bar, butcher, fishmonger, cheese, bread, pizza, beer, pasta, olive oils, condiments, pastry, gelato, bookstore and kitchenware), I worked my way through their produce area which, by the way, has a Vegetable Butchery department that preps your veggies however you like.  If you need to have your corn shucked, your artichokes trimmed, or your veggies sliced — they’ll do it for you at no extra charge.  Come to think of it, I forgot to ask them if they’d make me a green smoothie.  Hmm.  I will need to return and ask if they can make it happen…right?!

Being raw Italian style sounds sexy to me.  Perché non?  With an abundance of quality ingredients, one can easily find inspiration for preparing a raw Italian meal — literally, from soup to nuts!
