Raw Beginnings

The air is abuzz with excitement at the 105degrees Academy.  After a brief holiday period, today we resumed class for Level II training towards our Professional Chef Certification. For starters, here I am with two of my five classmates, Alissa and Sonja:

After orientation with our instructors Ladan Raissi and Chelsea Smith, we each were assigned a workstation in the Cafe's kitchen where during the ensuing months, we'll prepare the dishes being served for the restaurant.


By the way, today the Winter Menu debuted, and this is what I sampled:

Hawaiian Spice Smoothie Cannelloni with Ricotta, Marinara, Pesto

Delicious!  Need I say more?


…Later, we met with Matthew Kenney to discuss the curriculum.
